It Just Got REAL...

Here's another update on my progress and process. I had a couple appointments at my surgeon's office yesterday. I completed nutrition class 5 out of 6. So one more to go. I gained a little weight since last month's visit though. It's okay though. I also had a followup with my surgeon regarding the results of my EGD that was completed last month. I found out that I have a hernia that will have to also be repaired during my gastric bypass surgery. Glad it's going to be taken care of at the same time instead of having to do a separate surgery. My surgeon also ordered a butt load of labs for me to do. I'm anemic so he wants to make sure that I don't need an iron transfusion prior to surgery. I am down to this one last nutrition appointment then my paperwork goes to the insurance company for approval. I could be having surgery for my birthday this year. It is so close and I'm still excited about it. I now need to start stocking up on my vitamins, protein shakes and the items I'll need for my liquid diet. Time if flying by fast so let me get to work...

The ShakeDown Reunion...

Hey everybody, I went to my first workout class last night and it was off the chain. I was released by my doctor just in time. My former hip hop instructor came for a visit from California and held what we called The ShakeDown Reunion. I had such an amazing time with him and the crew. I could feel the burn after the first routine was done. This is what happens after being banned from workouts for two weeks lol. Even though I struggled a bit I made it the whole class and it was very intense, but super fun at the same damn time. I loved going through our old routines and he even snuck in a couple of new hot routines, too. I missed seeing the crew together. We all had a blast last night and can't wait for the next one.

Splash Dash 5K

Hey everyone, I completed the Splash Dash 5K. This was my first time doing this particular race and I must say it was a lot of fun and very WET...My youngest son did it with me and we had a good time. I will say that it was a bit of a struggle for me to complete because my lower back was not cooperating, but I finished. There were seven different water activities during the race including LOTS of people with water guns who were having too much fun soaking all the participants. South of the Border Loaded Sweet Potato

This one will definitely be modified for me. South-of-the-Border Loaded Sweet Potato   This is a featured recipe taken from The Biggest Loser Quick and Easy Cookbook by Chef Devin Alexander. When I'm cooking for myself, I prepare this potato with medium salsa and it has a nice kick. Feel free to use mild or hot, as many of the contestants do. When it comes to topping the potato with salsa, start out with 1/3 cup of fresh salsa and drain the liquid from it. It will likely only be about 1/4 cup (maybe a bit more) in the end. Note that the toppings won't fit inside the potato - they will spill out over the top, making it even more decadent to eat! 1 (8-ounce) sweet potato 4 ounces extra-lean ground turkey 3/4 teaspoon all-natural salt-free fajita or Southwest seasoning Olive oil spray (propellant free) 1/3 cup fresh salsa, drained (from the refrigerated section)- I will substitute rotel in the place of the salsa. 2 tablespoons jarred all-natural roaste...
